Ingredients :

  1. Bay leaf/ तेज पत्ता (2) break it
  2. Cardamom / छोटी इलायची (4)
  3. Cumin / जीरा (1tsp)
  4. Cumin black / शाहजीरा (1tsp)
  5. Coriander seeds / साबुत धनिया (2 tsp)
  6. Mace / जावित्री (1)
  7. Cloves / लोंग (1tsp)
  8. Black pepper / काली मि‌‌र्च (1tsp)
  9. Nutmeg / जयफल (1 1/2) grind using a mortar and pestle
  10. Poppy seeds / खस खस (2 tsp)
  11. Black cardamom / बड़ी इलायची (2) take out the skin and use seeds
  12. Star anise /चक्र फूल (1)
  13. Fennel seed / सौंफ (1tsp)
  14. Turmeric powder / हल्दी ( 1tsp)
  15. Red chilli powder/लाल मिर्च (1tsp)

Method:

1) Place all the above ingredients in a frying pan except the turmeric and red chilli powder.

2) Heat it for about 30secs on a high flame. Use a wooden spoon to lightly mix and stir the ingredients.

3) After 30 secs take the pan out. Transfer the ingredients to a plate to cool for about 2 mins.

4) Place all the ingredients in a mixer. Add one tsp of turmeric powder and 1 tsp of red chilli powder.

5) Grind all the ingredients for about 10 secs and then check for the texture.

6) Grind for another 10 secs to make it a slightly finer texture. Care to be taken not to make the mixture too fine.

7) Store the powder in a air tight container and use the powder within the next 2 weeks for best results.
