Mix vegetable parantha. Vegetable Paratha is a nutritious breakfast with the goodness of vegetables and a few spices. Dough 2 çups Whole Wheat Flour 2 teaspoons Cooking oil Salt to taste. Prepare dough and allow it to rest for 30 mins. For stuffing 2 – 3 Potatoes boiled and mashed 1 carrot finely grated 1/2 cup cauliflower finely grated 1/2 cup beans finely chopped 2 Green Chillies , finely chopped 1 tsp cumin seeds 1 tsp carom seeds Coriander leaves few sprigs, finely chopped 1 tsp mint leaves chopped 1/4 tsp garam masala powder Salt to taste. Ghee for roasting. In a hot pan, add the spices one by one Later add the raw vegetables saute for a while Add mashed potatoes and salt. Mix well and allow the vegetable stuffing to cool. Prepare parantha by using the stuffing Roast on both sides using ghee. Serve hot with fresh curds.
